We love our simple sweet brioche, but brioche is another level of sweet soft bread. You can literally squeeze it and it returns to its shape afterwards without being squished. I always found soft bread a bit scary and artificial until I baked it myself.

Today it’s almost routine for us to make a delicious homemade brioche recipe. As the name suggests, it’s all about perfect kneading and you get that by forming balls. Of course, you can also bake the bread as brioche bread without forming balls. However, kneading the bread into balls makes it particularly soft. The double resting time is also important for the bread.

Nevertheless, you can bake a really tasty brioche recipe yourself with just a few simple steps and hardly any special ingredients. The recipe also works well with margarine instead of butter, although this changes the structure and flavor slightly.

Our brioche recipe is one of our favorite recipes that we bake again and again. It’s quick to make and always delicious. It’s also the perfect base for French toast, but I’ll tell you more about that in a separate recipe in the future.

  • Heat the whole milk in a bowl/pot to approx. 30 °C and dissolve the yeast in it.
    160 ml whole milk
    7 g instant yeast
  • Place the soft butter, sugar, vanilla sugar, salt, egg and oil in the stand mixer and mix.
    80 g spreadable butter
    80 g sugar
    8 g vanilla sugar
    1 pinch fine salt
    1 egg
    11 g oil (neutral, e.g. sunflower oil)
  • Add the whole milk and yeast mixture and the flour and mix for approx. 3 minutes – first slowly, then at high speed. Start 3 minutes timer here
    380 g all purpose flour
  • Cover the yeast dough and leave to rest in a warm place for approx. 50 minutes. Start 50 minutes timer here
  • Place the dough on the work surface and form 3-8 balls, coat with butter and place in a greased loaf tin.
  • Cover the loaf tin and leave to rise again in a warm place for approx. 30 minutes. Start 30 minutes timer here
  • Place the brioche in the oven preheated to 200 °C and bake for 30 minutes. Start 30 minutes timer here
  • Brush the finished bread with a mixture of butter and milk while still hot and leave to cool on a wire rack.
