Delicious and quick plum cake recipe with crumble for a simple sheet cake. Plum cake recipe for a sheet of plum cake with crumble made very easy and simple. Soft, moist and a little crunchy - that's what our best plum cake tastes like.
Allow the ingredients for the shortbread to blend in a food processor until a firm sticky dough is formed.
420 g cake flour
70 g sugar
200 g margarine, vegetable
4 eggs
12 g vanilla sugar
16 g baking powder
1 pinch fine salt
Now place this shortcrust pastry in a square springform pan that has been previously lined with baking paper. With a little flour, spread the dough over the entire surface with your fingers or a small pastry roller. Alternatively, you can use a baking tray with a baking frame instead of the springform pan.
Wash, core and quarter the plums. Insert the plum pieces slightly on edge into the shortcrust pastry.
2 kg purple plums
Now mix the crumbles in the food processor. I first add sugar, then flour and finally the soft almost liquid butter or margarine. Now spread the crumble on the plums.
90 g sugar
300 g cake flour
150 g margarine, vegetable
12 g vanilla sugar
Bake the cake at 200 °C for about 40 minutes. Then let cool and remove the edges of the springform pan before serving. Start 40 minutes timer here

Alternatively, you can bake this sheet cake completely without crumbs and get the typical classic plum cake from the sheet - grandma's plum cake. If you have a little more time, you can also use a yeast dough as a base instead of shortcrust pastry.As other variants for topping instead of plums, you can top this sheet cake with apples, applesauce, cherries or peaches. If you don't have enough plums, you are welcome to combine two kinds directly.The important thing is to use plums instead of prunes for the cake. Even though people always talk about plum cake, you can't use the typical plums for baking.I also always like to halve the portion and get a small portion of sheet cake, as you can see in the pictures.
