First, pour the whole milk and whipping cream into a cooking pot and slowly heat up.
250 g whole milk
250 g whipped cream
In a tall mixing bowl, mix the egg yolks, juice of a freshly squeezed lemon, sugar, vanilla extract and dextrose well with a hand blender and add to the warm pan.
4 egg yolk
1,5 tsp vanilla extract
40 g sugar
1 tbsp lemon
10 g glucose powder
Bring the mixture to 83 °C in the pot, stirring constantly, and remove from the heat.
Leave to cool for approx. 50 minutes until the mixture is no longer warm to the touch. Start 50 minutes timer here
Once cooled, pour the mixture into the ice cream maker and chill and mix according to the ice cream maker instructions.
As soon as the ice cream in the ice cream maker has a slightly firm consistency (in our ice cream maker after approx. 5-6 minutes), slowly add the chocolate chips.

Depending on the ice cream maker, the cooling time and production time of the delicious and simple stracchiatella ice cream takes around 10-20 minutes.
Pour the finished ice cream into beautiful bowls and decorate with fresh fruit, sauces or Smarties and other crumbles, if desired, and enjoy.
Notes
Tip: The ice cream can easily be stored in the freezer for several days afterwards.Please note: If you want to eat the ice cream again afterwards, it will take a little longer to defrost (compared to ice cream from the supermarket), but it will taste all the better for it.
