Put all ingredients together in a food processor and knead intensively with a dough hook for about 6 minutes. Start 6 minutes timer here
350 g bread flour
125 g dark rye flour
125 g whole grain spelt flour
90 g walnuts
30 g sunflower seeds
50 g oats, rolled
14 g fine salt
10 g honey
14 g instant yeast
440 g water, still
Now place the dark dough in a large glass bowl sprinkled with flour and sprinkle again with a little flour. Cover the glass bowl with cling film and let the dough rest in a warm place for at least 50 minutes until it has doubled in size. Start 50 minutes timer here
Preheat the oven to 200 °C, forming either a large loaf - alternatively form smaller baguette loaves or bread rolls.
Place the finished molds on a baking sheet with holes or in a baking pan with holes then bake for 35 minutes. Start 35 minutes timer here
Let finished bread cool and serve while still fresh slightly warm or let cool completely.
